This weeks guest cheese is Stinking Bishop, not a cheese to lose at the back of the fridge. World famous since it replaced Wensleydale as Wallace’s favourite cheese. The smell comes from the rind that is washed in perry.  It has a soft texture and a strong taste, which fortunately is considerably more subtle than the smell.
